ge where we are focusing on eating locally raised meat and eating less of it. The authors have the right idea when it comes to reducing (but not giving up) meat, which will have a positive impact on both our health and the environment. I also follow on Twitter (OrganiconaDime), here’s my 2nd entry=) The recipe on the cover ofthat cookbook looks delicious!
It’s very simple but so good. Whole Wheat Pasta with toasted walnuts, red onion, garlic, spinach and feta cheese. Dressing is 2tbls walnut oil and 2 tbls red wine vinegar with 1/2 tsp Dijon Mustard. Even better the next day. I actually picked up the recipe from Ellie Krieger’s cookbook. It’s my go to when I don’t know what to have for dinner.

Cream cheese, black olives and sprouts on a whole-wheat bagel!
Fajitas are my favorite! I can feed all 4 of us with two chicken breasts because I use so many peppers and onions. Paired with a little raw cabbage, some cheese, sour cream and a lettuce leaf on whole wheat (homeade) tortillas… heaven! They may not be conventional, but we love them! (and I’ll still have enough left for my lunch the next day with brown rice.)

First off, I love a good cook book…and our favorite almost meatless meal is a zucchini, black bean and rice skillet that I sometimes add chicken too…it is delish and I make it once a week b/c I love it so much and the kids like it too which is a big plus
Sometimes we run out of meat in the freezer and need some new ideas. My family eats just about anything so I love to cook for them.
#1 I would absolutely love this cookbook! This perfectly fits what I want to be doing with my family!
My favorite almost meatless recipe is spinach and bean casserole with a little pork sausage added.
1 cup dry black-eyed peas (used canned if in a hurry, cut back on salt if using canned)
1/4 cup olive oil
1 onion, chopped
3 cups fresh spinach
1 (28 ounce) can peeled and diced tomatoes
2 teaspoons salt
1 teaspoon fennel seed, ground
Some pork sausage (cook)
Cook black-eye peas in a pressure cooker for 12 minutes.
Heat oil in a large saucepan over medium high heat. Saute onion with spinach, tomatoes, salt and fennel for 15 minutes. Add beans and cooked sausage and let simmer for about 15 minutes. If there is still a lot of liquid I add about 2 tablespoons of out bran to thicken it up. My kids love this! (You can add chicken instead or even go with no meat)
Potato & asparagus casserole topped with cheddar and a couple of crumbled strips of bacon!
