I’ve come across an unusual amount of disturbing news articles lately and have been sharing them on facebook. Sure “ignorance is bliss” but now that I am no longer ignorant about this stuff I can’t help but read and want to further spread the word. So just to put it all in one place here’s a summary of the stories that have been catching my attention…
"Pink Slime" Being Served in U.S. Schools
In case you haven’t heard…the USDA just purchased 7 million pounds of “Pink Slime” to serve in school lunches. This stuff, which is made from connective tissue and tainted beef scraps that’s been doused in ammonia to kill E. coli and salmonella, was recently dropped by McDonald’s, Taco Bell, and Burger King thanks to consumer outcry. This is a little off-topic today, but it was too good – and too relevant for us personally – not to share. You see, I think my kids are pretty well behaved for the most part, but lately I seem to have to ask them over and over (and over!) again to get them to listen to me. And both of my daughters have the best excuses like “I didn’t hear you” or “I forgot” or the newest one around here… “I can’t remember what you said.” So now you can understand why I perked up when fellow North Carolinian Amy McCready, founder of Positive Parenting Solutions & TODAY Show contributor, gave me the idea that I could actually get my “kids to listen without nagging, reminding or yelling.”

Until I had kids in school I never realized how many holidays and special occasions could be celebrated. Aside from the standard ones like Halloween and Valentine’s Day there’s also the 100th Day of School, President’s Day, and Football Fridays. And apparently tomorrow is Dr. Seuss’s birthday, which means it’s yet another day filled with fun themed activities including food of course! Plus who can resist bringing one of Dr. Seuss’s most legendary books to life…Green Eggs and Ham! No need to break out the nasty artificial green dye though, see below for a much more nutritious (and delicious) alternative. Eggs and kale make a surprisingly good combination and once you’re done you can check “eating your greens for the day” off your list. But whether you are a Dr. Seuss fan or not you can still enjoy this dish for breakfast (lunch or dinner). I promise it will taste just as good without the colorful toothpicks. Enjoy!
