By 100 Days of Real Food, on December 1st, 2011 I was browsing through the $5 Dinner Mom’s website when I came across her ingenious idea to mix up a big batch of seasonings at one time for an easy homemade Ranch dressing. Once your spice mixture has been made it’s a very simple process to add your perishable ingredient whenever you’re in the mood for some homemade dressing. Talk about being efficient! Now we prefer a Ranch dip over a dressing at our house (especially since it magically makes my 6-year-old eat twice as many carrots as normal) so below is a modified version that turns Erin’s spice mixture into a Ranch dip instead of a Ranch dressing. Enjoy!

By 100 Days of Real Food, on November 15th, 2011 My daughters love this cornbread so much they would happily eat it for dessert. I happen to be more of a dark chocolate girl, but I do love the fact that this version of corn bread has actual bits of corn in the batter. This recipe would be a great addition to any Thanksgiving spread, but could easily be served as a side to dishes like chili or other soups throughout the year. And if you like to switch things up consider adding some jalapeno bits or other spices to the batter or you could also add Swiss or Parmesan cheese instead of the cheddar. Don’t be afraid to make it your own! Continue Reading »
By 100 Days of Real Food, on October 11th, 2011 Just in case you aren’t feeling the spirit of autumn yet here’s one more reason to get you in the mood. Eve ry year there’s lots of talk about Starbuck’s famed “Pumpkin Spice Latte,” but why leave the kids out of all the fun? I don’t know about you, but my children have not graduated to lattes quite yet, which is why I came up with this “Pumpkin Spice Hot Chocolate” drink for them instead. And since it has cocoa in it you can easily add a shot of espresso to turn it into an adult “Pumpkin Spice Mocha” as well…which is more my speed over a latte anyhow. Enjoy!

By 100 Days of Real Food, on July 18th, 2011 One day I was out of berries and my girls wanted a fruit smoothie so, inspired by a blog reader, we tried a peanut butter banana smoothie instead and…yum! It doesn’t get much easier than this, and we find smoothies to be the perfect supplement to almost any breakfast or lunch. These are also super good frozen too, but more on that later.

By 100 Days of Real Food, on June 17th, 2011 When I first heard about microwaving popcorn in a brown paper lunch bag I could not imagine that something so simple would really work. A blog reader actually shared this suggestion with me, and it took me a while to work up enough courage to try it out. I am so glad I finally did because approximately 3 minutes and 15 seconds later I had fresh, fluffy, whole-grain popcorn that hadn’t been touched by a drop of oil, salt, sugar, or any other additives. And after lightly seasoning it myself with a tad of oil and salt it was delicious! I will never waste my money on those store-bought microwave bags ever again. Continue Reading »
By 100 Days of Real Food, on June 14th, 2011 I used to think quinoa (pronounced keen-wah) was a rather strange ingredient. And I vowed to never post recipes on this blog that call for strange ingredients. But it seems as though quinoa is becoming more commonplace, and I am certain some of you have a bag of it sitting in your pantry and don’t know what to do with it. I admittedly let our first bag of quinoa just chill for about six months before I worked up enough courage to try something so unusual and different. It’s funny how new ingredients can do that to us.
Long story short quinoa is very similar to couscous. You can eat it plain or add all sorts of seasonings and other fresh flavors to it. And we happen to think this recipe below is a real crowd pleaser. It can be eaten as a side with your lunch or dinner or brought along as the perfect addition to a potluck gathering. We also brought this salad camping the other weekend, and it would work great at an outdoor cookout as well. Trust me – you can’t go wrong so just make it, and I promise it will be gone in no time!
