I am in love with this new muffin recipe! It’s soooo good I think I want one with frosting on top for my birthday (which is not until May, but a girl can plan ahead)! The raspberries and lemon compliment each other so well, and it’s such a nice diversion from the usual muffin flavors. I hope your kids gobble up these lemon raspberry muffins like mine did. I’d love to hear what they think in the comments below. :)
Once I started feeling comfortable with the “real food” changes in our kitchen, it took me no time at all to realize I needed to move on to other areas of my house! I most certainly don’t have it all figured out, but since this question is asked so often I thought I’d share some of what you’ll find in my bathroom cabinets these days.
These Carrot Fritters with Yogurt Sauce make a fabulous side dish for either dinner or breakfast. In the morning, pair them with an omelet (topped with a touch of cheese and sliced avocado) and a side of fruit (see picture below). And in the evening, serve with seafood (such as sautéed shrimp or scallops) and an arugula salad. These fritters are great leftover as well, so feel free to make them in advance or double the recipe so you can have them with two meals in a week!
I got to do one of my favorite things on the Charlotte Today show this morning…debunk deceiving food labels! We went through 6 different examples of packaged foods, and I shared better (and realistic) alternatives for each. I used to buy every single one of these processed items before my real food wake up call back in 2010. Which ones have you fallen for?
This is another dish that’s easy enough to throw together for a busy weeknight meal, yet pretty enough to make for dinner guests as well! I recently made this recipe when my parents were in town (with a big salad on the side), and the serving platter was completely empty by the end of dinner. I absolutely love meals that are so much easier to make than they appear. :)

Eating real food is important to me and just as important for my family. I know firsthand that this is not always easy, and it doesn’t happen overnight. But as parents, I feel that it’s our job to give our kids the knowledge of what healthy actually means—both in and outside the house.
Our First Soccer Experience
Last fall, my 7 year old joined the local soccer league—a very organized one at that. We’re still in the stage of figuring out where our kids’ talents lie, and for this season, it was soccer. One practice a week and one game on weekends…that I could handle. But the snack situation I could not.
The first game rolled around, and each girl was instructed to bring a water bottle. Super, I thought. They absolutely need hydration. The coach had brought a big bag of oranges, cut and ready to be consumed, which the kids ate during the 45 minute game. Awesome! I loved that they had a sweet, nourishing whole food snack and water to nosh on while taking a breather.
But then when they finished the game and were given a bag of Cheez-It’s and a Capri Sun, I was baffled. Um, really? But what was I going to do, be the mean mom who wouldn’t let my daughter take the snack? (I was not the mean mom this time.)
