It’s hard to believe that Independence Day is almost upon us! And since most big holidays are all about the FOOD, I’ve got a bunch of real food recipe ideas for you today. The point here is that celebrations can still be fun even with real food as the focus.

As I mentioned, both my older daughter and I were inspired by our recent 30-day Green Smoothie Challenge to try some new combinations and more importantly some new-to-us (in smoothies) ingredients. This is a super easy one-dish meal that gets gobbled up quickly at my house. My younger daughter is rather picky about what veggies she’ll eat, but she loves Brussels sprouts – go figure. So this is a go-to weeknight meal for us, and I love to sometimes pair it with wild rice on the side.
