I’ve got a fun summer kitchen project for you that might just get your kids to try some new veggies! Not only are these Veggie Spring Rolls fun to make, but you’ll end up eating the entire rainbow in one meal.
I love to grow and eat fresh herbs but never even considered adding them to a green salad for some extra flavor. So (now that I know better!), I added some thyme to this Spinach Salad recipe below, and it was a fabulous addition.

I recently shared a Red & Green Chili recipe that was also for the slow cooker, but it did require a little bit of stove cooking first. I know it’s only one extra step (and worth it in the end), but some days just one less thing to do can make all the difference! With this Steak Chili recipe, my goal was to make things as quick and EASY as possible. And trust me, it doesn’t get any easier or more delicious than this one. So if you are looking for a way to stay warm this winter or to feed a bunch of extra house guests, this recipe will not disappoint! (Just be sure to double it for a big crowd.)
This dish is super easy to throw together, and it’s definitely a crowd pleaser. Who doesn’t love Mexican food? I don’t think it’s a secret that our family is a BIG fan and almost once a week we are sure to enjoy some south of the border fare like homemade refried beans, taco salad, pork carnitas, flank steak fajitas, vegetable quesadillas, homemade tortillas, or the like. And now we can add these “tostadas” to our repertoire…

We’re currently in the middle of the October Unprocessed challenge, and this is a perfect “unprocessed” recipe to make for your family – or for yourself, with plenty of leftovers! I may not yet have kids of my own (I added that “yet” in there to give my mom hope), but I sure do know how to feed a crowd. Every year I throw a big New Year’s party in which we do a lot of cooking and eating together… oftentimes we’re making dinner for about 30 people. So we’ve learned how to feed a hungry group quickly and efficiently. A few years back, my friend Dan made “Enchilada Casserole” for the crew, and it immediately became a part of our holiday dinner rotation. It’s easy to prepare, and barely any extra work to double or triple the recipe. You can also prepare the casserole in advance and just throw it in the oven an hour before dinnertime. It’s easily adaptable to special diets, too.
Based on the popularity of my other crock pot “real food” recipes I think you guys will love this one, too. Slow cookers are great for entertaining because you can easily get all the work done in advance and have your house smelling amazing when guests arrive (we use this basic, inexpensive slow cooker). I just made these fajitas myself the other day and my daughters kept asking me “What smells so good??” They couldn’t wait to dig in and if you make the tortillas in advance it will just take some grated cheese, sour cream, and cilantro (plus any other fixings you like on your fajitas), and your feast will be ready in no time. I am getting hungry just talking about it. But don’t take my word for it…you must try it for yourself!
We absolutely love quesadillas in this house. It is one of our most favorite “go-to” meals and the reason is because you don’t need a lot of specific ingredients to make them. It’s one of those dishes where you can throw in whatever vegetables you have on hand (and need to eat)! As long as you have whole-wheat tortillas, cheese, and some spices the rest can come together pretty easily. I do admit that sweet potatoes somehow do something magical to the flavor of this dish, but even if we don’t have any we still make quesadillas all the time. So don’t let that stop you!
I love soups because they’re an easy way to get in a lot of vegetables, and they are usually awesome leftover (whether they’ve been in the fridge or freezer). I am a big fan of serving easy dinners on busy weeknights and there is nothing easier than defrosting some soup out of your very own freezer. I especially love this soup because it comes with so many “accessories.” You could certainly eat it plain, but it is amazing how the flavor suddenly changes when you pile avocado, grated cheese, sour cream, and cilantro on top. We even sometimes toast tortillas (to make them crunchy like chips) and throw them in the mix as well. This is also a great dish to serve this week if you are participating in our third real food mini-pledge. Even though this dish is meatless it would still be great if you wanted to add a little raw chicken when you sauté the veggies (or even some leftover cooked meat at the end). Just like most of the recipes I post this one is super flexible. If you don’t have or like zucchini then use a different vegetable instead. If you randomly find a half container of mushrooms in your fridge…throw them in. Get creative and use what you have on hand to make this dish easy and budget-friendly!
Making your own sushi at home is actually not as hard as one would think, and it can make for a very fun evening with friends or family…both young and old. My picky 3-year-old wouldn’t even think about touching a piece of sushi until the first time she saw us making it at home (with brown rice of course). We had allowed our older daughter to be up on a chair at the counter with her own cutting board, bamboo mat, chopsticks, and fun little soy sauce dish (she already knew she liked vegetable sushi). Of course her little sister wanted to do the same, but we told her she couldn’t “make” any sushi unless she ate it. And what do you know…once our child (who barely even eats veggies in the first place) gave it a fair chance she actually liked it. I didn’t know if I should have been more shocked that she ate the sushi or the vegetables! She does love to “dip” her food so I am guessing the soy sauce aspect had something to do with it. I do want to make sure I share that (especially if this is your first time making sushi) it can take some time to get the hang of it, and it also requires a lot of chopping. It can also make a little bit of a mess particularly if kids are involved. So we definitely like to reserve this event for a special occasion or weekend activity, but think it is worth the effort for such a fun and unique experience. I love a lot of different foods, but let me tell you that this fajita recipe is right up there at the top. This is the kind of meal where you hear my husband and I “mmmming” and “aaahhhhing” at how good the flavor is the whole time we are eating. Anytime you cook with the freshest ingredients it is hard to go wrong, but I especially think the homemade tortillas are a big part of what makes this recipe so money. If you don’t want to invest the time to make the tortillas then I think store-bought corn tortillas are the best alternative. Unless you have a local bakery, it is really hard to find whole-wheat breads or tortillas from the grocery store without a bunch of junk in them. I did once try Ezekiel flour tortillas (which are made with sprouted grains and kept frozen at Earth Fare), and even though the ingredients were decent I didn’t feel the same way about the taste.
