Recently at a family reunion in Ohio I found myself in a late-night conversation so captivating that I didn’t go to bed until 2:00 AM. I was chatting with Adam Yanke, M.D. and Rupel Dedhia, M.D. who both practice medicine in Chicago, IL. Adam is Lisa’s cousin and is in residency to become an orthopedic surgeon while his wife Rupel is a practicing General Internist (which is definitely not the same thing as an intern, by the way!) These photos are from a trip to the Himalayas where they provided free medical care to local people. They travel extensively and Rupel’s parents are originally from India, so while the young couple is very much at home in Chicago and have been educated in the US, they also benefit from a world view. So why was I so excited to hear their perspectives?

Have you noticed lately that everyone seems to be avoiding certain foods for one reason or another? Maybe it’s food allergies or intolerance or perhaps just a dietary preference.
If you’re looking to add one more dish to your Fourth of July spread then search no more! Pasta salad is the perfect addition to a summer gathering because it can easily be made in advance and will stay fresh for days. It is also fairly easy to find 100% whole-wheat pasta, which means this dish is “real food” approved. Rather than coming up with completely new recipes for pasta salad though I actually want to showcase two “older” 100 Days of Real Food recipes that can be reinvented by simply adding noodles.
This Greek yogurt-based sauce is incredibly simple to make and versatile. It is traditionally served with souvlaki and gyros, but we think there are many more possibilities beyond these dishes. Tzatziki can be used as a dip for veggies and whole-wheat pretzels (instead of bottled ranch dressing) or as sauce to pour over chicken. It’s also good thrown into a whole-wheat wrap or pita with vegetables like cucumber and tomatoes. We’ve even mixed it together with whole-wheat couscous and feta cheese…so get creative and enjoy!
Making your own sushi at home is actually not as hard as one would think, and it can make for a very fun evening with friends or family…both young and old. My picky 3-year-old wouldn’t even think about touching a piece of sushi until the first time she saw us making it at home (with brown rice of course). We had allowed our older daughter to be up on a chair at the counter with her own cutting board, bamboo mat, chopsticks, and fun little soy sauce dish (she already knew she liked vegetable sushi). Of course her little sister wanted to do the same, but we told her she couldn’t “make” any sushi unless she ate it. And what do you know…once our child (who barely even eats veggies in the first place) gave it a fair chance she actually liked it. I didn’t know if I should have been more shocked that she ate the sushi or the vegetables! She does love to “dip” her food so I am guessing the soy sauce aspect had something to do with it. I do want to make sure I share that (especially if this is your first time making sushi) it can take some time to get the hang of it, and it also requires a lot of chopping. It can also make a little bit of a mess particularly if kids are involved. So we definitely like to reserve this event for a special occasion or weekend activity, but think it is worth the effort for such a fun and unique experience. This easy-to-make cold soup recipe is a twist on traditional gazpacho (which is made with tomatoes). We happen to love this version, and it is the perfect dish for a hot summer day. Cucumbers are still in season here in the Carolinas, and you certainly can’t beat using fresh local ingredients!
