Tacos are a big favorite at my house, so I love it when I can cut the meat with a can of beans and make it last longer. But what’s better (I’ve learned) is adding in some mushrooms in addition to the beans to stretch things even further.
Last month we were lucky enough to celebrate my husband’s cousin’s 40th birthday with friends and family from afar, in Mexico. We not only had a blast but enjoyed lots of tasty food while we were there too, including Huevos Rancheros for breakfast every single morning!

Based on the popularity of my other crock pot “real food” recipes I think you guys will love this one, too. Slow cookers are great for entertaining because you can easily get all the work done in advance and have your house smelling amazing when guests arrive (we use this basic, inexpensive slow cooker). I just made these fajitas myself the other day and my daughters kept asking me “What smells so good??” They couldn’t wait to dig in and if you make the tortillas in advance it will just take some grated cheese, sour cream, and cilantro (plus any other fixings you like on your fajitas), and your feast will be ready in no time. I am getting hungry just talking about it. But don’t take my word for it…you must try it for yourself!
We absolutely love quesadillas in this house. It is one of our most favorite “go-to” meals and the reason is because you don’t need a lot of specific ingredients to make them. It’s one of those dishes where you can throw in whatever vegetables you have on hand (and need to eat)! As long as you have whole-wheat tortillas, cheese, and some spices the rest can come together pretty easily. I do admit that sweet potatoes somehow do something magical to the flavor of this dish, but even if we don’t have any we still make quesadillas all the time. So don’t let that stop you!
After recently watching my 4 and 6-year-old daughters gobble down some “Cobb Salad” I decided to apply that very same idea to this “Taco Salad.” Who doesn’t like to see all the choices laid out beautifully so you can pick and choose what you want (like a taco salad platter)? And what mommy doesn’t like to see a few pieces of lettuce accidentally slip into the mix on her kids’ plates? :) Now I’d be lying if I told you that my younger (and pickier) daughter didn’t put up a little fuss about eating some of the green stuff in this dish. But I helped her roll some of the meat, cheese, and sour cream that she looooves inside a few bigger pieces of lettuce, and it helped things tremendously. She knew she had to take a big bite right into the lettuce if she wanted the goodies on the inside. I, on the other hand, just thought this was such a refreshing and fun twist to the traditional taco dinner. So this meal was a big hit in my book.
I love a lot of different foods, but let me tell you that this fajita recipe is right up there at the top. This is the kind of meal where you hear my husband and I “mmmming” and “aaahhhhing” at how good the flavor is the whole time we are eating. Anytime you cook with the freshest ingredients it is hard to go wrong, but I especially think the homemade tortillas are a big part of what makes this recipe so money. If you don’t want to invest the time to make the tortillas then I think store-bought corn tortillas are the best alternative. Unless you have a local bakery, it is really hard to find whole-wheat breads or tortillas from the grocery store without a bunch of junk in them. I did once try Ezekiel flour tortillas (which are made with sprouted grains and kept frozen at Earth Fare), and even though the ingredients were decent I didn’t feel the same way about the taste.
