I’ve got a fun summer kitchen project for you that might just get your kids to try some new veggies! Not only are these Veggie Spring Rolls fun to make, but you’ll end up eating the entire rainbow in one meal.
When 100 Days of Real Food asked me to write a recipe for a natural alternative to PediaSure, I was very excited. I am an integrative pediatrician, and real food is what my practice is based upon. I have seen the affects of synthetic processed foods on children, and anything I can do to help spread the word about whole food nutrition makes me over-the-moon excited!
Just in time for Cinco de Mayo, I am excited to share a super simple and delicious mango salsa recipe inspired by my daughter! But, before we get into how to make this dish, let’s discuss how exactly to cut a mango in the first place.

We have a super simple and healthy recipe we’ve been itchin’ to share with you!!! As two crazy-busy passionate moms, we’ve been known to fuel our bodies with processed junk. Like those days when we found ourselves at Starbucks twice in one day…or driving through Taco Bell for dinner…again.
We were starved for time, low on energy and just….overwhelmed.

Sure throwing a few ingredients in a blender to make a smoothie doesn’t take long, but on a busy weekday morning we all know…every minute counts! And after trying out this make ahead method of bagging (or bottling) up smoothie ingredients myself, I can attest that it really does make a difference.
Even in the afternoons when the girls get home from school, I might not always be into the idea of getting out all the different ingredients to make a smoothie, but if the fruits and veggies were already packaged up in the exact right proportions? Sure, we can have a smoothie snack any day! It’s amazing how sometimes a little advance preparation can go a long way.
I’ve found a way to make fruit roll-ups at home that are sweet, shiny, and totally rollable. I love to throw together whatever fruits I have on hand–even frozen berries work well, and I’ll often mix multiple fruits or throw in a bit of spice. All that’s required is a fruity puree and either a dehydrator or a low oven to transform it into a sticky delicious sheet of fruity goodness worthy of even the most exciting lunchbox.

My daughter asked if she could have a rainbow party for her 5th birthday this year, so I immediately got onto Pinterest and searched for “Rainbow Birthdays.” Many of them were filled with skittles, jelly beans, lollipops, jello, and cakes made with artificial dyes. This was just not going to be okay with me! Did you know that artificial food dyes are derived from petroleum and require a warning label in other countries? I thought I can totally do this without junk food and dyes, so I got to work. Here’s a peak at the end result (with detailed instructions below):

It’s no secret that I recently started perusing our local farmer’s market. These outings have left me with a variety of nutritious, tasty vegetables…that I often times have no idea what to do with! Which is exactly why I am so excited about this stir-fry recipe. I was able to use 5 of the items that I found at the farmers’ market in this one recipe – that is definitely a record! Plus, if you make the sauce yourself and serve it with brown rice, you end up with a delicious, healthy meal.
