I’ve got a super easy new recipe to share with you today … Vegetarian Slow Cooker Black Bean Tacos! This simple and tasty dish is from my friend Gina’s new Skinnytaste Fast and Slow cookbook.
Recently the term “Baby Led Weaning” (BLW) was introduced to us here at 100 Days of Real Food, a term that, believe it or not, none of us had heard of before. Our small team collectively has 11 kids (4 of which are mine) and without a doubt, we are tuned into lots and lots of real food-related information. Yet none of us knew about or (thought we) had personally used Baby Led Weaning with our own children. We were encouraged by some readers to take a look into the philosophy… and so we did. Interested in learning about this method – and how it might help introduce baby to real food – we did a little research on the subject so that others, like us, who may not know the term or ideals, can become informed.

I’ve been waiting all year to have fresh red tomatoes in my backyard, but this green tomato relish recipe is SO incredibly delicious that I didn’t even think twice about plucking some off the vines before they could even ripen. I occasionally get obsessed with certain recipes, and my friends – this is one of them! I don’t think it’s a secret that I am also slightly obsessed with the crock-pot refried bean recipe and let me tell you those beans are suddenly reinvented when topped with this relish (in addition to the standard melted cheese and sour cream of course). Not that I haven’t been caught just eating this relish by the spoonful. :) Can you tell I am smitten? Anyway due to all the chopping and simmering this recipe will require several hours of your time from start to finish, which isn’t a common theme with my recipes so I wanted to be sure to point that out. If you aren’t into the “canning” thing you can easily shave off some time by simply freezing the end results. Either way you won’t regret it…yum! I love a lot of different foods, but let me tell you that this fajita recipe is right up there at the top. This is the kind of meal where you hear my husband and I “mmmming” and “aaahhhhing” at how good the flavor is the whole time we are eating. Anytime you cook with the freshest ingredients it is hard to go wrong, but I especially think the homemade tortillas are a big part of what makes this recipe so money. If you don’t want to invest the time to make the tortillas then I think store-bought corn tortillas are the best alternative. Unless you have a local bakery, it is really hard to find whole-wheat breads or tortillas from the grocery store without a bunch of junk in them. I did once try Ezekiel flour tortillas (which are made with sprouted grains and kept frozen at Earth Fare), and even though the ingredients were decent I didn’t feel the same way about the taste.
