We know that healthy eating can be a challenge on the road, but if there’s one thing we’ve learned over the years, it’s that you don’t have to completely abandon your healthy habits when you travel. For us, that means finding ways to include green smoothies in our travel plans.
I am so excited to tell you all about my friends Jadah and Jen’s brand new Simple Green Smoothies book! First of all, my whole family loves smoothies – they are our green drink of choice.

We have a super simple and healthy recipe we’ve been itchin’ to share with you!!! As two crazy-busy passionate moms, we’ve been known to fuel our bodies with processed junk. Like those days when we found ourselves at Starbucks twice in one day…or driving through Taco Bell for dinner…again.
We were starved for time, low on energy and just….overwhelmed.

This blended drink of fresh fruits and dark leafy greens gave us energy, a fast healthy meal and transformed our bodies from the inside out. No joke. My daughter asked if she could have a rainbow party for her 5th birthday this year, so I immediately got onto Pinterest and searched for “Rainbow Birthdays.” Many of them were filled with skittles, jelly beans, lollipops, jello, and cakes made with artificial dyes. This was just not going to be okay with me! Did you know that artificial food dyes are derived from petroleum and require a warning label in other countries? I thought I can totally do this without junk food and dyes, so I got to work. Here’s a peak at the end result (with detailed instructions below):
It’s no secret that I recently started perusing our local farmer’s market. These outings have left me with a variety of nutritious, tasty vegetables…that I often times have no idea what to do with! Which is exactly why I am so excited about this stir-fry recipe. I was able to use 5 of the items that I found at the farmers’ market in this one recipe – that is definitely a record! Plus, if you make the sauce yourself and serve it with brown rice, you end up with a delicious, healthy meal.
