Just got back from the trip of a lifetime to Morocco, and I've got "tagine" recipe for your slow cooker to share since we absolutely loved the food abroad!
1wholechickencut into parts (back and giblets removed)
1 1/2poundspotatoescut into 1-inch pieces
1largetomatocored and cut into wedges
1/2pound green beanstrimmed and cut in half
4largecarrotspeeled and cut into 1-inch pieces
1cuppeasfrozen
1largezucchinior 2 small
14 ounce jargreen olivesor 1 cup
3clovesgarlicminced
1/3cupcilantrofresh
1/3 cupparsleyfresh
Instructions
In a small bowl mix together the paprika, ginger, turmeric, cumin, pepper and salt with a fork. Set aside.
Place the onion in the bottom of a slow cooker. Put the chicken parts on top. Sprinkle with half the seasoning mix.
Layer in the potatoes, tomato, green beans, carrots, peas, zucchini, green olives, and garlic. Sprinkle with the remaining spice mix and gently toss the veggies together.
Top with fresh cilantro and parsley, cover, and cook on high for 4 to 5 hours or until the chicken is tender enough to fall off the bone. Could also cook on low for 7 to 8 hours.
