Make a double batch of these easy breakfast burritos. Loaded with eggs, potatoes, sausage, and veggies, they are a complete meal.

INGREDIENTS

1. Cook the potatoes

In a large skillet over medium-high heat, cook the diced potatoes for about 5-6 minutes.

2. Add the veggies

Stir in the onions and bell peppers and cook for 3-4 more minutes until veggies are soft. Set aside.

3. Cook the meat

In the same skillet, cook the meat until no longer pink while breaking up with a spoon, about 5-6 minutes.  Set aside.

4. Cook the eggs

In the same skillet, pour in the eggs and let rest until they start to set. Then scramble until cooked all the way and stir in cheese.

5. Assemble

Lay out each tortilla. Evenly distribute the sausage, potatoes, and eggs on top. Roll them up and secure with foil. Serve or add to freezer-safe bag and freeze for later.
