A classic comfort food, perfect for a cozy autumn day! These baked apples are filled with a warm and flavorful mixture of oats, nuts, and spices. Easy to make and so delicious, they're a healthy and satisfying treat.
Preheat the Oven: First, preheat your oven to 350°F (175°C).
Prepare the Apples: Core the apples, making sure to leave the bottom intact to hold the filling. You can use a small knife or an apple corer for this. Place the apples in a baking dish.
Make the Filling: In a mixing bowl, combine the rolled oats, applesauce, chopped nuts, raisins, ground cinnamon, nutmeg (if using), almond milk, and vanilla extract. Mix until everything is well combined.
Stuff the Apples: Spoon the oat mixture generously into each cored apple, packing it down slightly to fit.
Bake: Cover the baking dish with foil and bake for 25-30 minutes, or until the apples are tender. Remove the foil for the last 10 minutes of baking to allow the topping to crisp up.
Serve: Once baked, remove from the oven and let cool slightly. Serve warm, optionally sprinkled with additional cinnamon.
Notes
Choose firm apples that hold their shape well during baking, such as Fuji, Gala, or Braeburn.
Swap out nuts for seeds (like pumpkin or sunflower seeds) for a nut-free version.
Add a splash of maple syrup or honey for additional sweetness, if desired, while keeping it refined sugar-free.
Baked stuffed apples can be stored in an airtight container in the refrigerator for up to 3 days and reheated in the oven or microwave before serving.
