Beef tips and rice is a hearty and satisfying dinner! The beef tips are cooked until they are melt-in-your-mouth tender, and the peppers and onions add a delicious flavor. This one-pot recipe is easy to make and filled with real food ingredients. It is also great for leftovers!
To start, place the beef tips in a bowl. Sprinkle with salt, pepper, garlic powder, and onion powder. Toss until the beef is fully seasoned.
In a large pan, add the olive. Heat over medium until hot. Pan sear the steak on all sides. Then, place the meat on a plate.
Add the butter to the pan. Once melted, add in the onions and bell peppers. Cook for 5 to 6 minutes, until tender.
Next, add in the broth and coconut aminos. Place the beef tips back in the pan. Bring to a boil. Then, reduce the heat to low. Place a lid on the pan.
Lightly simmer for 1 to 2 hours, or until the beef is tender. Just before serving, make the brown rice according to the package instructions.
Once the beef is tender, make the slurry. Take about ¼ cup of the liquid from the pan and add it to a small bowl. Mix in the tapioca flour, creating a creamy sauce. Stir this back into the pot.
Stir until the gravy sauce has thickened.
Finally, serve! Add the brown rice to a plate. Top with beef tips, peppers, onions, and gravy.
Notes
Use sirloin, tenderloin, or stew meat for the best results.

Continue simmering until the beef is fall apart tender.
The only replacements for tapioca flour are arrowroot powder and cornstarch. Cornstarch is very processed, so we recommend tapioca flour or arrowroot powder.
Store in the fridge for up to 4 days.
Heat leftovers in a skillet until warm.
