½

sea salt
1
teaspoon
baking soda
⅔
cup
coconut sugar
1 ½
cups
grated zucchini
excess moisture squeezed out
½
cup
melted coconut oil
2
eggs
1
teaspoon
vanilla extract
¾
cup
mini chocolate chips
Instructions
First, preheat the oven to 350 degrees Fahrenheit. Line a standard bread pan with parchment paper.
In a large mixing bowl, combine the Paleo baking flour, sea salt, baking soda, and coconut sugar.
Then, add in the grated zucchini, melted coconut oil, eggs, and vanilla extract. Stir together.
Add in the mini chocolate chips. Stir together.
Transfer the batter to the parchment-lined bread pan. If desired, sprinkle a few more chocolate chips on top.
Bake in the preheated oven for 45 to 50 minutes, or until a toothpick inserted comes out clean.
Finally, remove from the oven. Fully cool. Then, slice and serve!
Notes
Be sure to squeeze out the excess moisture from the grated zucchini. Use a cheesecloth or paper towel.
If you are not gluten free, feel free to substitute with whole wheat flour.
Do not bake the bread too long. It is done baking when a toothpick inserted comes out clean.
We suggest using Enjoy Life mini chocolate chips, although they do contain a little added sugar.
Store leftovers in an airtight container for up to 3 days.
Freeze the bread for up to 2 months.
