Mashed Cauliflower
This mashed cauliflower recipe is so creamy, smooth, and flavorful! This lower carb version of mashed potatoes is quick and easy. This cauliflower mash is great as a healthy side dish. Serve for family dinners, holidays, Thanksgiving, and more!

Ingredients

head
cauliflower
2
tablespoon
butter
or ghee

roasted garlic cloves
½
teaspoon
sea salt
½
teaspoon
black pepper
Instructions
First, bring a pot of water to a boil. Chop the head of cauliflower into florets. Boil the florets for 10 minutes, or until soft.
Then, drain the cauliflower.
Add all ingredients to a food processor or blender. Blend until smooth and creamy.
Finally, transfer to a serving bowl. If desired, add more butter on top. Serve!
Notes
Boil the cauliflower until soft, but not mushy.
If desired, use half cauliflower and half potatoes.
Freshly roasted garlic cloves add the most garlic flavor. If needed, use minced garlic or garlic powder.
Use a food processor or blender for the creamiest result. A potato masher will yield some chunks of cauliflower.
Store leftovers in the fridge for up to 3 days.
