This Millionaire's Shortbread is a flavor explosion! Rich shortbread meets gooey caramel and decadent chocolate for a treat that's easy to make and impossible to resist. We made our homemade version with wholesome ingredients for the perfect treat!
First, preheat the oven to 350 degrees Fahrenheit. Line an 8 inch square pan with parchment paper.
Combine the shortbread base ingredients in a mixing bowl. Stir together.
Press this shortbread mixture into an even layer in the lined pan. Bake for 10 minutes.
While the crust is baking, make the caramel sauce. Combine the caramel ingredients in a saucepan over low medium heat. Stir consistently, up to 5 minutes, or until sauce has thickened slightly.
Remove the crust from the oven. Pour the caramel sauce on top.
Place the pan in the freezer for 30 minutes.
After 30 minutes, remove the pan from the freezer. Make the chocolate topping. Melt the dark chocolate chips and coconut oil in 30 second increments in the microwave until melted.
Pour the melted chocolate on top. Place the pan back into the freezer for one hour, or until the chocolate topping has set.
Finally, when ready to serve, remove from the freeze, sprinkle with sea salt and slice.
Notes
I have not tried this recipe using a different flour.
Stir the caramel sauce constantly to prevent burning. It will become slightly thickened.
Allow the caramel layer to set before pouring the melted chocolate mixture on top of it.
Allow the millionaire's shortbread to solidify before slicing into squares.
