First, add chicken thighs and all ingredients to a large bowl. Toss until fully coated in juices and seasonings. Either make this recipe immediately or marinate the chicken in this mixture for up to 2 hours.
Add the olive oil to a large nonstick skillet over medium heat.
Once the oil is hot, add the seasoned chicken to the skillet.
Cook for 5 minutes. Then, carefully flip.
Cook for another 5 minutes.
Reduce the heat to medium low. Continue cooking, flipping occasionally, until chicken is fully cooked through. Chicken should be 165 degrees Fahrenehit internally.
Finally, remove the pollo asado from the pan. Top with fresh herbs if desired. Serve!
Notes
This recipe can be made with chicken breasts as well. Use a meat mallet to pound to ½ inch thickness.
Either make this recipe immediately or allow the chicken to marinade for up to 2 hours.
Even without the marinade time, this recipe is very flavorful.
