Almond Flour Blondies
Indulge in these delightful Almond Flour Blondies, a treat that is packed with wholesome goodness. Made with almond flour, a powerhouse of protein and fiber, and sweetened with coconut sugar and maple syrup, these blondies are chewy and gooey!

melted coconut oil

coconut sugar

all natural creamy almond butter

baking soda

pure maple syrup

vanilla extract
⅔

dark chocolate chips
Instructions
First, preheat the oven to 350 degrees Fahrenheit. Line an 8-inch square pan with parchment paper.
Melt the coconut oil in the microwave. Set aside.
In a large mixing bowl, add the coconut sugar and egg. Whisk to combine.
Then, sift in the almond flour. Stir to combine. The batter will be very dry.
Add in the creamy almond butter, baking soda, pure maple syrup, vanilla extract, and melted coconut oil. Stir to combine.
Fold in the dark chocolate chips.
Transfer the batter to the lined pan. Smooth into an even layer.
Bake for 15 to 17 minutes or until a toothpick inserted into the middle comes out mostly clean.
Lastly, remove from the oven. Wait until mostly cooled before slicing and serving.
Notes
If needed, replace the melted coconut oil with light flavored olive oil or avocado oil.
Peanut butter can replace the almond butter if desired.
These blondies are gooey at 15 minutes and baked through at 18 minutes.
Store in an airtight container for up to 4 days at room temperature.
If needed, freeze for up to 1 month.
