Almond Flour Blondies

These almond flour blondies have chewy golden edges and a soft gooey center! They taste like classic chocolate chip cookies in bar form. These blondies take just 25 minutes in total. They are quick and easy to make for any occasion. These gluten free blondies are a family favorite!

Ingredients & Substitutes

These are the ingredients and substitutions for almond flour blondies. Scroll down to the bottom for the entire recipe.

First, melted coconut oil adds moisture. Feel free to use light flavored olive oil or avocado oil instead.

Coconut sugar is a natural sweetener. It is less processed than brown sugar and white sugar.

One egg helps bind the blondies together. For a vegan and egg free version, replace the egg with ¼ cup unsweetened applesauce.

Use finely blanched. Do not use almond meal. We do not recommend using another flour in this recipe.

Creamy all natural almond butter adds moisture. Feel free to use all natural peanut butter instead. Choose the kind with only nuts and salt.

Baking soda helps these Paleo blondies rise in the oven.

Pure maple syrup adds moisture and natural sweetness. Feel free to use honey instead.

Vanilla extract adds a homemade flavor.

Lastly, use naturally sweetened chocolate chips. We love coconut sugar sweetened chocolate chips from Hu Kitchen.

Taste & Texture

These almond flour blondies are soft, chewy, and fudgy.

They have a rich flavor and a hint of sweetness from the coconut sugar and maple syrup.

These gluten free blondies have a delicious butterscotch flavor!

How to Make

Step 1

First, preheat the oven to 350 degrees Fahrenheit.  Line an 8-inch square pan with parchment paper.

Step 2

Melt the coconut oil in the microwave.  Set aside.

Step 3

In a large mixing bowl, add the coconut sugar and egg.  Whisk to combine.

Then, sift in the almond flour.  Stir to combine.  The batter will be very dry.

Add in the creamy almond butter, baking soda, pure maple syrup, vanilla extract, and melted coconut oil.  Stir to combine.

Fold in the dark chocolate chips.

Transfer the batter to the lined pan.  Smooth into an even layer.

Bake for 15 to 17 minutes or until a toothpick inserted into the middle comes out mostly clean.

Lastly, remove from the oven.  Wait until these almond flour blondies are mostly cooled before slicing and serving.

Use all natural creamy nut butter. Do not use almond butter or peanut butter with added sugar or oil.

Cream the butter and sugar together until light and fluffy.

Bake until the edges are barely golden brown and the center is still soft.

Let the blondies cool completely before cutting them into bars.

Chocolate chunks: Add 1 cup of chocolate chunks to the batter.

    I made these today for the first time. I added about half a teaspoon of almond extract and about half a teaspoon of salt as my almond butter had none. They are extremely delicious! Thanks for a great recipe!
