Ingredients & Substitutes

These are the ingredients and substitutions for almond flour cookies. Scroll down to the recipe card for the full recipe.

Use solid coconut oil. It should not be softened or melted. Use refined coconut oil for a neutral flavor. Unrefined coconut oil tastes slightly like coconut.

Coconut sugar is a delicious healthier sweetener. While brown sugar can be used, we love the taste of coconut sugar. In addition, it is much less processed than brown sugar.

Eggs help the cookies stay together. We have not tried using a vegan egg replacement. For that reason, we strongly recommend not replacing the eggs.

Vanilla extract adds a delicious cookie flavor.

Use finely blanched almond flour for the best texture. Do not use almond meal. Almond meal is much more coarse than almond flour.

Baking soda helps these cookies rise while baking.

A teaspoon of sea salt helps balance out the flavors.

Lastly, use dark chocolate chips or a low-sugar option. We love Hu Kitchen chocolate chips for a healthier option.

What is Almond Flour?

Almond flour is a versatile and increasingly popular alternative to traditional wheat flour! It is made from finely ground blanched almonds, which have had their skins removed.

The process involves blanching the almonds in boiling water to loosen the skins, then cooling and drying them before grinding them into a fine powder. This results in a flour with a light, fluffy texture and a mild, nutty flavor.

Due to its gluten-free nature, almond flour has gained significant attention from those with gluten sensitivities or those following gluten-free diets.

In terms of taste, almond flour is subtly sweet and nutty. It is not as neutral in taste as traditional wheat flour.

Additionally, almond flour has several health benefits. It is a good source of healthy fats, particularly monounsaturated fats, which can help support heart health.

Almonds are also rich in vitamins and minerals, such as vitamin E, magnesium, and calcium. Moreover, almond flour is low in carbohydrates and has a lower glycemic index compared to wheat flour. This makes it a suitable choice for individuals watching their blood sugar levels or following a low carb diet.

The almond flour gives the cookies a light and airy texture. They are not crispy or dry.

How to Make

Step 1

First, preheat the oven to 350 degrees Fahrenheit (175 degrees Celsius). Line a baking pan with parchment paper.

Step 2

In the bowl of a stand mixer, add the coconut oil and coconut sugar. Beat together for 2 minutes, until light and frothy.

Add in the eggs and vanilla extract. Mix together.

Next, add in the almond flour, baking soda, and sea salt. Stir to combine.

Fold in the dark chocolate chips.

Use a cookie scoop to scoop out the dough. Place on the prepared pan. Use your hands to lightly press down on each dough ball.

Step 7

Bake for 9 to 10 minutes or until the cookies look lightly golden around the edges.

Step 8

Finally, remove the pan from the oven. Allow the cookies to cool on the pan for 10 minutes before transferring to a cooling rack. Sprinkle extra sea salt on top if desired.

Use blanched finely ground almond flour that is finely ground.  This will help the cookies to be light and chewy.

Do not use almond meal.

Do not overmix the cookie dough.

  • ¾ cup coconut oil (solid)
  • 1 ⅓ cups coconut sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 3 cups almond flour
  • 1 teaspoon baking soda
  • 1 teaspoon sea salt
  • 1 cup dark chocolate chips

Notes

  • Use solid coconut oil, not melted or softened.  If your coconut oil is not solid at room temperature, measure out the 6 tablespoons and place it in the fridge.
  • Use a stand mixer or electric hand mixer to beat the coconut oil and coconut sugar.  Beat for at least 2 minutes.
  • We suggest using a cookie scooper to make evenly sized, round balls of dough.
  • Slightly press down on each dough ball before baking.  Otherwise, these cookies will not flatten out much.
  • Store leftovers at room temperature for 4 days.  Store in an airtight container.
  • Freeze cookies for 2 months as needed.
