Ingredients & Substitutes

These are the ingredients and substitutions for these Paleo chocolate chip cookies. Scroll down to the recipe card for the full recipe.

Use finely blanched almond flour. Do not use almond meal. In addition, do not try to make homemade almond flour.

Coconut flour is an absorbent flour. When combined with almond flour, it gives these cookies the perfect texture.

Two eggs help hold these cookies together. We have not tried using an egg substitute, but typically unsweetened applesauce works well. For each egg, use ¼ cup unsweetened applesauce instead. So, for this recipe, use ½ cup of applesauce.

Coconut oil is a healthy baking fat. Use slightly softened coconut oil. Do not melt.

Baking soda helps these cookies remain thick and tall.

Vanilla extract adds a cozy homemade flavor.

Coconut sugar helps naturally sweeten these cookies. Brown sugar is a viable substitute, but we try to limit processed sugars. In addition, brown sugar is not considered Paleo.

Lastly, dark chocolate chips or chunks add the best flavor! Look for naturally sweetened chocolate.

Sprinkle sea salt on top after baking if desired.

These Paleo chocolate chip cookies are thick and soft! They are more soft than traditional cookies.

They are slightly less sweet than traditional cookies.

The almond flour gives them a slightly nutty flavor.

Overall, these Paleo cookies are so delicious!

How to Make

Step 1

First, preheat the oven to 350 degrees Fahrenheit. Line a cookie pan with parchment paper.

Step 2

Add the softened coconut oil and coconut sugar to your mixing bowl or KitchenAid. Beat to combine, until no lumps of coconut oil remain.

Then, add in the eggs and vanilla extract. Stir to combine.

Next, add in all of the remaining ingredients except for the chocolate chips.

Once mixed, fold in the chocolate chips.

Next, use a cookie scoop to scoop the dough. Place the balls of dough at least 2 inches apart on the parchment lined baking sheet.

Gently press down on each cookie to form a cookie shape.

Next, bake for 9 to 11 minutes. Remove the pan from the oven. Let cookies cool for 3 minutes before removing to a wire rack.

Finally, garnish the Paleo chocolate chip cookies with sea salt if desired.

Beat the coconut oil and coconut sugar until completely smooth and creamy.

When it comes to baking, accurate measurements are key. Use a kitchen scale if possible.

Use high-quality dark chocolate chips and pure vanilla extract for the best flavor.

Use a cookie scoop to scoop the dough. This creates evenly sized cookies.

Press down slightly on each ball of dough before baking. These cookies barely spread while baking.

Keep an eye on the cookies as they bake in the oven. It is better for them to be slightly underdone than overcooked.

Notes

  • If you are not dairy-free, feel free to replace the coconut oil with softened butter.
  • We love using Hu Kitchen dark chocolate chips for this recipe.  They are naturally sweetened.
  • Use a cookie scoop to scoop the cookie dough.  This creates evenly-sized, round cookies.
  • Do not bake too long.  They will look slightly soft when they come out of the oven.
  • Store the cookies in an airtight container at room temperature for up to 3 days. 
  • For firmer cookies, store them in the fridge for up to 7 days.
  • These cookies freeze and thaw well!
