Our Chicken Fajita Bowls burst with juicy, tender chicken, vibrant peppers and onions, and fluffy cauliflower rice! Dive in and customize with fresh pico, creamy guac, and zesty salsa. These bowls are customizable and great for the whole family!
First, add the olive oil to a large skillet. Cut the chicken into 1 inch pieces. Once the olive oil is hot, add in the cubed chicken, garlic powder, onion powder, cumin, chili powder, chipotle powder, and lime juice. Stir until the chicken is seasoned well.
Once the chicken is lightly browned on all sides, but not yet fully cooked, add the peppers and onions to the skillet. Cook for 5 to 6 minutes, until the chicken is fully cooked through and the veggies are softened.
At the same time, add the cauliflower rice, olive oil, sea salt, and lime juice to another skillet. Cook for 3 to 4 minutes, until warmed through. Stir occasionally to prevent burning.
Finally, assemble the chicken fajita bowls. Add in the cauliflower rice, topped with chicken, peppers, and onions. Lastly, garnish with sliced avocado, salsa, and cilantro.
Notes
Use either boneless chicken breasts or thighs.
Cut the chicken into 1-inch sized pieces.
Use a meat thermometer to make sure the chicken is fully cooked through to 165 degrees Fahrenheit.
Feel free to use brown rice instead of cauliflower rice. Prepare according to package instructions.
Store leftovers in the fridge for up to 5 days.
To reheat, place leftovers in a skillet. Heat until warmed through.
