At the same time, add the cauliflower rice, olive oil, sea salt, and lime juice to another skillet. Cook for 3 to 4 minutes, until warmed through. Stir occasionally to prevent burning.

Fajita Chicken

  • 2 lbs boneless skinless chicken breasts
  • 1 tablespoon olive oil

Notes

  • Use either boneless chicken breasts or thighs.
  • Cut the chicken into 1-inch sized pieces.
  • Use a meat thermometer to make sure the chicken is fully cooked through to 165 degrees Fahrenheit.
  • Feel free to use brown rice instead of cauliflower rice.  Prepare according to package instructions.
  • Store leftovers in the fridge for up to 5 days.
  • To reheat, place leftovers in a skillet.  Heat until warmed through.
