Olive oil helps sear the chicken and veggies. Avocado oil is another great choice.

Use boneless skinless chicken breasts or chicken thighs. These are both great options.

These chicken fajitas have the best flavor and texture! The chicken is juicy and flavorful. In addition, the onions and peppers are tender and slightly caramelized.

The combination of flavors and textures is truly amazing. These flavors are bold, a little spicy, and tasty.

How to Make

Step 1

First, add 1 tablespoon olive oil to a large skillet over medium heat. While the oil heats, season the chicken.

Step 2

Use a meat mallet to pound out the chicken breast to ½ inch thickness. In a small mixing bowl, combine the cumin, paprika, garlic powder, salt, pepper, oregano, and chili powder. Rub this seasoning mix all over the chicken.

Step 3

Once the oil is hot, carefully place the seasoned chicken in the pan. Cook for 5 minutes. Carefully flip and cook for another 5 minutes, or until cooked through. Set the chicken aside.

Add the remaining 1 tablespoon of olive oil, sliced peppers, and onions to the skillet. Cook over low medium heat for 10 minutes, stirring occasionally to prevent burning.

Slice the chicken into long thin strips. Add the chicken back to the pan. Add in the lime juice. Then, stir together.

Finally, serve these chicken fajitas with tortillas, guacamole, and salsa if desired.

  • 3 boneless skinless chicken breasts
  • 1 teaspoon cumin

Notes

  • Do not skimp on the seasonings.  It adds so much flavor!
  • We love using our homemade whole wheat tortillas for this recipe.  We also love eating the chicken and fajita veggies in a bowl.
  • Use a meat thermometer to ensure the chicken is cooked through.  Chicken is considered safe to eat when it has reached 165 degrees Fahrenheit internally.
  • Store leftovers in the fridge for up to 4 days.
