Ingredients
4
chicken sausages
sliced into rounds
1
pound
gold potatoes
cut into 1 inch pieces
2
bell peppers
sliced
1
sweet onion
sliced
1
tablespoon
minced garlic
1
tablespoon
olive oil
Instructions
First, preheat your oven to 400 degrees Fahrenheit.
Add all ingredients to a large bowl. Toss until everything is coated in oil.
Arrange in one even layer on a baking pan with edges.
Bake for 12 to 15 minutes, or until the sausage and veggies are crispy.
Finally, remove from the oven. Serve immediately!
Notes
Feel free to use your favorite brand of sausage.
This recipe also works with pork sausage and chorizo.
Cut the potatoes and veggies into equal sized pieces.
For super tender potatoes, boil them for 15 minutes before baking.
Store leftovers in the fridge for up to 4 days.
Reheat in the oven or in a skillet.
