For the Dressing

olive oil

mayonaise
I like “cleaner” brands such as Chosen Foods or
Primal Kitchen

Dijon mustard

lemon juice

anchovy paste

For the Salad/Assembly

large head
romaine lettuce
chopped
4
ounces
smoked salmon
(or smoked trout)
¼
cup
parmesan cheese
freshly grated

green onions
chopped (white and green parts), optional
Instructions
For the Dressing
Combine all ingredients and blend until smooth using a countertop or handheld blender.
For the Salad/Assembly
Toss the lettuce with the dressing until well coated and top with the salmon, parmesan cheese, and green onions (if using).
