Ingredients

sour cream
¾
cup
queso fresco
or cotija cheese (crumbled), plus extra for garnish, if you can't find this at your grocer, stop by your favorite Mexican restaurant and ask to buy some from them!

cilantro
chopped, plus extra for garnish

lime juice

chili powder

grilled or boiled (fresh corn only takes about 5 to 6 minutes)
salt
to taste
pepper
to taste
Instructions
In a
medium bowl
, mix together the sour cream, cheese, cilantro, lime juice, and chili powder until well combined.
Sprinkle (cooked) corn with salt and pepper then pour sour cream mixture over top. Garnish with extra cilantro and cheese and serve.
