Ingredients
Cookies
½
cup
all-natural creamy peanut butter
5
tablespoon
pure maple syrup
1
cup
almond flour
Filling
⅓
cup
all-natural creamy peanut butter
Instructions
First, preheat oven to 350 degrees Fahrenheit. Line a baking pan with parchment paper.
In a mixing bowl, combine the peanut butter, maple syrup, and almond flour. Stir to combine.
Roll the dough into ½ inch sized balls. Place 2 balls next to each other on the prepared pan. Continue for the remaining cookie dough.
Gently press down on each dough ball with a fork, creating a criss-cross pattern.
Then, bake for 10 to 12 minutes or until just set around the edges.
Remove the pan from the oven.
Once the cookies are fully cooled, spread peanut butter on half the cookies. Top with the other half of the cookies, creating a sandwich. Serve!
Notes
Use all natural creamy peanut butter made from only peanuts and salt. Do not use a brand with added oils or sugar.
Make the cookie dough balls small. Larger sized cookies tend to break apart for these cookie sandwiches.
Bake the cookies until they are set around the edges and no longer gooey in the middle.
Cool the cookies completely before adding the peanut butter filling.
Store at room temperature in an airtight container for up to 4 days.
