Ingredients

cup
pitted dates
1
cup
unsweetened coconut flakes
½
cup
melted dark chocolate
Instructions
First, add a piece of parchment paper to a pan.
Add the pitted dates and coconut flakes to a food processor or blender.
Process for 30 seconds, until the mixture sticks together between your fingers.
Form the mixture into flat discs and place them on the parchment lined pan.
Use the end of a wooden spoon to form a hole in the middle of each cookie.
Dip the bottom of each cookie in the melted chocolate. Place on the lined pan. Drizzle melted chocolate on top.
Place the pan in the fridge for 20 minutes, until the chocolate has hardened.
Finally, remove from the fridge and serve! Store leftovers in the fridge.
Notes
Pit the dates before processing.
Feel free to make the cookies as big or as small as you want.
Chill in the fridge until the chocolate has hardened.
Store in the fridge or freezer in an airtight container.
