¼
teaspoon
baking powder
⅓
cup
unsweetened coconut milk
or other dairy-free milk
2
tablespoon
mini dark chocolate chips
Instructions
To start, add all of the ingredients to a large mug or ramekin. Save a few mini chocolate chips for garnish.
Mix the ingredients together. The batter will be similar to pudding.
Next, microwave on high for 60 seconds. If more time is needed, microwave in quick 10-second increments until cooked through.
Use oven mitts to remove the mug from the microwave. Sprinkle more chocolate chips on top!
Finally, serve this protein mug cake!
Notes
It can be very tough to find real food protein powder. We love
Prime Protein Unflavored
because it contains only one ingredient!
If you need to replace the oat flour, use 3 tablespoons of almond flour instead.
For a version with less sugar, omit the chocolate chips. They contain a little added sugar.
Your microwave may be stronger or weaker. Adjust the cooking time as needed.
Be careful handling the mug. It will be very hot!
Best served warm and fresh.
