Cheesy Eggplant Bake

Ingredients
  

  • 1 large eggplant (about 2 pounds, cut into 1-inch cubes)
  • 3 tablespoons olive oil
  • salt (to taste)
  • pepper (to taste)
  • 1 32-ounce jar marinara sauce
  • 6 ounces mozzarella cheese (shredded)
  • ¼ cup Parmesan cheese (freshly grated)
  • whole-wheat pasta (cooked, for serving)
  • basil (fresh, for serving)

Instructions
 

  • Preheat oven to 375° F.
  • Heat the olive oil in your largest skillet over medium heat. Add the cubed eggplant and cook while stirring until it darkens in color, about 5 minutes. Season with salt and pepper.
  • Pour half the marinara sauce in the bottom of a 13 x 9 inch baking dish. Shake it around to ensure it's evenly spread. Add the eggplant on top.
  • Sprinkle all but ½ cup of the shredded mozzarella on top of the eggplant, pour in the rest of the sauce, and top it with the remaining mozzarella and grated parmesan.
  • Bake until bubbly and golden brown, about 25 - 30 minutes. Serve warm over whole-wheat noodles and topped with fresh basil.

    As a mom of three children under the age of 5 I have lots of cutting to do. Everything has to be bite sized for all of them from the 14 month old to the 5 year old. Plus, I love to cook; and from scratch as much as possible. So my knifes have to cut everything from produce to cheese to bread. Facebook.

    I would use the knives for meal prep and cutting fruits and vegetables. Cutting up pineapples is not an easy task with my current knives! lol

    My knives get dull so easily. I'd love to have some quality knives to use in my daily cooking. Winter squash especially is so challenging to cut with dull/cheap knives!

    I have literally worn out my set of Henckels knives and need to replace them. This Kamikoto 神箏 Kanpeki Knife Set sounds like the perfect replacement, certainly several steps up from what I've been using. I cut large amounts of veggies daily for juicing. I recently moved into a new home with a built in grill, so I'll use these knives to cut a variety of meats and other foods for grilling.     I love making sushi, and of course a sharp knife is highly necessary for cutting the roll apart. It looks like these knives are good for a lot of different things though! Summer watermelon and winter squash would be nice to cut with a nice big knife like the one you're using to cut the eggplant.

    It's funny that you are having this giveaway today because my husband and I have been researching knives to replace our mismatch, dull ones.
