Cheesy Eggplant Bake

Ingredients
  

  • 1 large eggplant (about 2 pounds, cut into 1-inch cubes)
  • 3 tablespoons olive oil
  • salt (to taste)
  • pepper (to taste)
  • 1 32-ounce jar marinara sauce
  • 6 ounces mozzarella cheese (shredded)
  • ¼ cup Parmesan cheese (freshly grated)
  • whole-wheat pasta (cooked, for serving)
  • basil (fresh, for serving)

Instructions
 

  • Preheat oven to 375° F.
  • Heat the olive oil in your largest skillet over medium heat. Add the cubed eggplant and cook while stirring until it darkens in color, about 5 minutes. Season with salt and pepper.
  • Pour half the marinara sauce in the bottom of a 13 x 9 inch baking dish. Shake it around to ensure it's evenly spread. Add the eggplant on top.
  • Sprinkle all but ½ cup of the shredded mozzarella on top of the eggplant, pour in the rest of the sauce, and top it with the remaining mozzarella and grated parmesan.
  • Bake until bubbly and golden brown, about 25 - 30 minutes. Serve warm over whole-wheat noodles and topped with fresh basil.

    I would use the daily for preparing meals for my family. I'm a stay at home mom and I usually prepare 3 meals a day and the knives I currently use are pretty worn out. Lol

    I'd use the knives for everything - but right now our garden is almost ready for harvesting a lot, so we'll use them for those. Also, our current knives were a cheap set we got when we first got married - I'd be nice to have some good ones!

    Meal prepping would be much easier with the right set of knives. Slicing, dicing and peeling fruits and veggies is a chore with my old knives.

    I would love to use the knives to cook with my husband and 3 kids. We love to try new recipes and are getting the kids cooking early so they will enjoy it growing up and know how to make healthy wholesome food! We love the 100 Days recipes!

    How gorgeous are these knives?! I would love to use these knives for so many things...right now, though, I'd love to slice up some thick slices of fresh sun-warmed tomatoes from our garden! mmmm....and some cucumbers for some crunch...delightful!

    I'd love to have a chef quality knife set to be able to filet fish, debone chicken, and quickly mince garlic and onions. It's impossible to do these things well with standard kitchen knives you buy at the store.

    I am a NYC fireman who works in Brooklyn. I am constantly making healthy meals for the brothers at the firehouse. We have a few of us who love to cook!
