Ingredients
  

  • 1 large eggplant (about 2 pounds, cut into 1-inch cubes)
  • 3 tablespoons olive oil
  • salt (to taste)
  • pepper (to taste)
  • 1 32-ounce jar marinara sauce
  • 6 ounces mozzarella cheese (shredded)
  • ¼ cup Parmesan cheese (freshly grated)
  • whole-wheat pasta (cooked, for serving)
  • basil (fresh, for serving)

Instructions
 

  • Preheat oven to 375° F.
  • Heat the olive oil in your largest skillet over medium heat. Add the cubed eggplant and cook while stirring until it darkens in color, about 5 minutes. Season with salt and pepper.
  • Pour half the marinara sauce in the bottom of a 13 x 9 inch baking dish. Shake it around to ensure it's evenly spread. Add the eggplant on top.
  • Sprinkle all but ½ cup of the shredded mozzarella on top of the eggplant, pour in the rest of the sauce, and top it with the remaining mozzarella and grated parmesan.
  • Bake until bubbly and golden brown, about 25 - 30 minutes. Serve warm over whole-wheat noodles and topped with fresh basil.

      I am a home cook, and would Love to have these knives. I Love to chop veggies and carve my meats and fillet my Fish.. We Fish every weekend and these knives would be great to have.

    Hi! I would use the Kamikoto knife set for all the slicing and dicing I do to prepare my family whole food dinners. They don't always eat so healthy throughout the day, so I try to go the extra mile to cook from scratch, healthy meals. Crappy knives are the worst! I would love to win this set. :)

    I have been trying to cook with only fresh fruits, vegetables and herbs, but some can be hard to prepare without a good set of knives. I know a new set of knives would get a good work out with me and I would be forever grateful.

    I would use these knives for my everyday cooking. My knives now are terrible and I have suffered several wounds and scars from my poor and dull current kitchen knives but have not been able to afford new ones. This would be a true blessing to win! Look amazing!

    I would use these absolutely every day, for every thing! These are far too wonderful to keep put away for special occasions or just certain preps. A high-quality knife is your best friend in the kitchen, and your best friend is always by your side!
