Cheesy Eggplant Bake

Ingredients
  

  • 1 large eggplant (about 2 pounds, cut into 1-inch cubes)
  • 3 tablespoons olive oil
  • salt (to taste)
  • pepper (to taste)
  • 1 32-ounce jar marinara sauce
  • 6 ounces mozzarella cheese (shredded)
  • ¼ cup Parmesan cheese (freshly grated)
  • whole-wheat pasta (cooked, for serving)
  • basil (fresh, for serving)

Instructions
 

  • Preheat oven to 375° F.
  • Heat the olive oil in your largest skillet over medium heat. Add the cubed eggplant and cook while stirring until it darkens in color, about 5 minutes. Season with salt and pepper.
  • Pour half the marinara sauce in the bottom of a 13 x 9 inch baking dish. Shake it around to ensure it's evenly spread. Add the eggplant on top.
  • Sprinkle all but ½ cup of the shredded mozzarella on top of the eggplant, pour in the rest of the sauce, and top it with the remaining mozzarella and grated parmesan.
  • Bake until bubbly and golden brown, about 25 - 30 minutes. Serve warm over whole-wheat noodles and topped with fresh basil.

    When our home became contaminated with three types of toxic mold, we were forced to discard every possession we owned. We now only have a couple of inexpensive (non-toxic) pairing knives. Since mold damage is not covered by insurance, rebuilding a healthy, chemical free home is a challenge- on our best days.

    What would I do with these beautiful knives? I long to chop fresh veggies for soup and then slice a homemade loaf of bread to go with it. I want to cook again! (I recently acquired a replacement soup pot. :)

    My family and I just bought a 12 acre farm and we We are we are moving in just over a week. I am starting an early childhood nature/farm based school there and we will grow much of our own organic foods. Clean and healthy eating is central to what we want to teach. These knives will be so helpful as we "process" our harvests into delicious preserves and dishes!

    I would use these knives to cut up fresh tomatoes from my garden and make homemade salsa. My current knives do a horrible job. I would make it muy caliente and eat it by the spoonful.

    I would love to have this knife set to take with me to several different places thta I cook. I am a cook at a school for.apecial needs children and prepare meals meeting different diet needs for each child. One weekend a month I cordintate a meal to feed anyone in need of a nutritious meal. I would also be delighted to use them to prepare meals for my family.

    The thing that is most detrimental to my eating healthy veggies is the cutting and chopping. Perhaps if I owned some really high quality knives, this would be a more enjoyable task!
