The Kamikoto 神箏 Kanpeki Knife Set that we gave away includes one slicing knife (8.5 inches long), one vegetable knife (7 inches long), and one utility knife (5 inches long) to tackle the smaller, more intricate chores in the kitchen. Each knife is precision balanced and weighted for optimal form and long-lasting performance, and each blade is carefully tapered on one side and hollow ground on the other. Both handle and blade are satin finished, and the entire set is presented in a natural-colored ash wood box for safe storage and keeping.

Cheesy Eggplant Bake

Ingredients
  

  • 1 large eggplant (about 2 pounds, cut into 1-inch cubes)
  • 3 tablespoons olive oil
  • salt (to taste)
  • pepper (to taste)
  • 1 32-ounce jar marinara sauce
  • 6 ounces mozzarella cheese (shredded)
  • ¼ cup Parmesan cheese (freshly grated)
  • whole-wheat pasta (cooked, for serving)
  • basil (fresh, for serving)

Instructions
 

  • Preheat oven to 375° F.
  • Heat the olive oil in your largest skillet over medium heat. Add the cubed eggplant and cook while stirring until it darkens in color, about 5 minutes. Season with salt and pepper.
  • Pour half the marinara sauce in the bottom of a 13 x 9 inch baking dish. Shake it around to ensure it's evenly spread. Add the eggplant on top.
  • Sprinkle all but ½ cup of the shredded mozzarella on top of the eggplant, pour in the rest of the sauce, and top it with the remaining mozzarella and grated parmesan.
  • Bake until bubbly and golden brown, about 25 - 30 minutes. Serve warm over whole-wheat noodles and topped with fresh basil.

    I would use these wonderful knives to make all the dialysis meals I have to cook. I'm an ESRD Patient and have to cook all my food from scratch due to the dietary restrictions. These would be a great help.

    I would gift these knives to my mom. She was a stay at home mom and spent many hours in the kitchen teaching me how to cook. Everything we made in my household was from scratch, she taught me not to cheat and use mixes and I'm a good cook because of her! I've been cooking since I could walk! My mom loves good quality knives and takes good care of them. Most of her knives she's had since I was a baby and I would love to gift her a fancy new set.
