Cheesy Eggplant Bake

Ingredients
  

  • 1 large eggplant (about 2 pounds, cut into 1-inch cubes)
  • 3 tablespoons olive oil
  • salt (to taste)
  • pepper (to taste)
  • 1 32-ounce jar marinara sauce
  • 6 ounces mozzarella cheese (shredded)
  • ¼ cup Parmesan cheese (freshly grated)
  • whole-wheat pasta (cooked, for serving)
  • basil (fresh, for serving)

Instructions
 

  • Preheat oven to 375° F.
  • Heat the olive oil in your largest skillet over medium heat. Add the cubed eggplant and cook while stirring until it darkens in color, about 5 minutes. Season with salt and pepper.
  • Pour half the marinara sauce in the bottom of a 13 x 9 inch baking dish. Shake it around to ensure it's evenly spread. Add the eggplant on top.
  • Sprinkle all but ½ cup of the shredded mozzarella on top of the eggplant, pour in the rest of the sauce, and top it with the remaining mozzarella and grated parmesan.
  • Bake until bubbly and golden brown, about 25 - 30 minutes. Serve warm over whole-wheat noodles and topped with fresh basil.

    Cooking is way more fun with good tools. I would use these knives to slice garden veggies--chopped salad can make any vegetable taste good (like "kale broccoli" from my kale that decided to go to seed early).

    I wish I could tell you that the knives would propel me to a Parisian standard of preparing meals. I cook a lot and with a hodge podge of thirty year old knives that do not hold an edge. They are not ergonomic or balanced so they are uncomfortable to work with during my food prep. I recently bought a Henkel knife and it is wonderful. Cooking is easier and more fun.     I would love to use the Kamikoto Kanpeki knife set to chop up the fresh veggies from our garden. Now that I'm doing whole foods I'm chopping, slicing, peeling and cutting so much more and I'm afraid my current variety of knives are not up to the task long term. These look great!

    I would love a few new knives - especially high quality!! We chop SO many little fruits for my one year old so those little knives sure get a workout! My husband and son go through watermelon at an alarming rate so the slicing knife would be an excellent addition to our kitchen!! Not a day goes by without tons of chopping, slicing, and dicing around here, especially now that it's grilling season!

    I have been looking for some solid and SHARP elegant knives that can stand up to the demand I would have of them as a canner. Putting up tomatoes every year takes a lot of knife work. It's exacting work, too. I need to be sure to pare away only the core of tomatoes so as to limit wasting any valuable tomato goodness. My weekly prep of vegetables to eat and cook with during the week could also use such a talented workhorse type of knife! Very happy to discover Kamikoto knives through you! I've since liked and will be following Kamikoto for new presents on Facebook!
