The Kamikoto 神箏 Kanpeki Knife Set that we gave away includes one slicing knife (8.5 inches long), one vegetable knife (7 inches long), and one utility knife (5 inches long) to tackle the smaller, more intricate chores in the kitchen. Each knife is precision balanced and weighted for optimal form and long-lasting performance, and each blade is carefully tapered on one side and hollow ground on the other. Both handle and blade are satin finished, and the entire set is presented in a natural-colored ash wood box for safe storage and keeping.

Cheesy Eggplant Bake

Ingredients
  

  • 1 large eggplant (about 2 pounds, cut into 1-inch cubes)
  • 3 tablespoons olive oil
  • salt (to taste)
  • pepper (to taste)
  • 1 32-ounce jar marinara sauce
  • 6 ounces mozzarella cheese (shredded)
  • ¼ cup Parmesan cheese (freshly grated)
  • whole-wheat pasta (cooked, for serving)
  • basil (fresh, for serving)

Instructions
 

  • Preheat oven to 375° F.
  • Heat the olive oil in your largest skillet over medium heat. Add the cubed eggplant and cook while stirring until it darkens in color, about 5 minutes. Season with salt and pepper.
  • Pour half the marinara sauce in the bottom of a 13 x 9 inch baking dish. Shake it around to ensure it's evenly spread. Add the eggplant on top.
  • Sprinkle all but ½ cup of the shredded mozzarella on top of the eggplant, pour in the rest of the sauce, and top it with the remaining mozzarella and grated parmesan.
  • Bake until bubbly and golden brown, about 25 - 30 minutes. Serve warm over whole-wheat noodles and topped with fresh basil.

    I always buy cheap knives since I am in school and would rather spent money on organic healthy food.
    I would love to not have to cut my veggies twice.
    To make a clean cut with ease.

    I would use the knives during my meal prep several hours a week. Not eating processed food means lots of hours in the kitchen and lots of cutting. All the work is worth it. We feel the difference.

    We cook everything from scratch using your principles:-) We have a ton of allergies, which is another reason we created a love of cooking from scratch. My hands ache most days from all the prep! These knives would help tremendously in our kitchen :-)

    These knives would be an awesome addition to my kitchen. I've been working with standard knives that we got as a gift for our wedding almost 17 years ago. I've always hated chopping stuff and it's truly the quality of the knives. So these would help in ANY meal in my kitchen.

    I am a first time commenter, but a huge fan! I love 100days of real food and I tell everyone about it! I own both the cookbooks and we cook from them weekly. I would love to use these knives to cook for my husband and foster children! I only have one really good knife so I would put these to good use!
