About Kamikoto High-End Knives

The Kamikoto 神箏 Kanpeki Knife Set is handcrafted from high-quality steel from Honshu 本州, Japan and rigorously quality tested to ensure that it meets the distinction and caliber of Kamikoto 神箏.

The Kamikoto 神箏 Kanpeki Knife Set that we gave away includes one slicing knife (8.5 inches long), one vegetable knife (7 inches long), and one utility knife (5 inches long) to tackle the smaller, more intricate chores in the kitchen. Each knife is precision balanced and weighted for optimal form and long-lasting performance, and each blade is carefully tapered on one side and hollow ground on the other. Both handle and blade are satin finished, and the entire set is presented in a natural-colored ash wood box for safe storage and keeping.

Ingredients

  • 1 large eggplant (about 2 pounds, cut into 1-inch cubes)
  • 3 tablespoons olive oil
  • salt (to taste)
  • pepper (to taste)
  • 1 32-ounce jar marinara sauce
  • 6 ounces mozzarella cheese (shredded)
  • ¼ cup Parmesan cheese (freshly grated)
  • whole-wheat pasta (cooked, for serving)
  • basil (fresh, for serving)

Instructions

  • Preheat oven to 375° F.
  • Heat the olive oil in your largest skillet over medium heat. Add the cubed eggplant and cook while stirring until it darkens in color, about 5 minutes. Season with salt and pepper.
  • Pour half the marinara sauce in the bottom of a 13 x 9 inch baking dish. Shake it around to ensure it's evenly spread. Add the eggplant on top.
  • Sprinkle all but ½ cup of the shredded mozzarella on top of the eggplant, pour in the rest of the sauce, and top it with the remaining mozzarella and grated parmesan.
  • Bake until bubbly and golden brown, about 25 - 30 minutes. Serve warm over whole-wheat noodles and topped with fresh basil.

Notes

  1. Gluten free when using gluten-free pasta for serving.
  2. We recommend organic ingredients when feasible.

I would replace my old cheepy knives I've been using for years. Since following a cleaner eating diet there's a lot more chopping and cutting in my prep time and I love it. Good knives would make all the difference in the world! Facebook

I'm in the hunt for a great knife set to cut things like butternut and spaghetti squash. Ugh I find it so difficult to these when they are large in the fall. I guess I could also strengthen my arms with some pushups ;) P.S. Love the blog and have used your recipes SO many times to feed my toddlers. Thank you!

Some people love to cook, while others like myself, cook for love. I have a daughter with PKU. It is a rare disease that is completely regulated by diet. She eats low protein medical foods and lots of fruits and vegetables. In one meal we maybe having 3-5 fruit and veggie sides. That is a lot of chopping! I have tried many knifes over the years and non have been that good at the task for long. I would love to get my hands on some quality knifes!
