Each knife is precision balanced and weighted for optimal form and long-lasting performance, and each blade is carefully tapered on one side and hollow ground on the other. Cheesy Eggplant Bake

Ingredients
  

  • 1 large eggplant (about 2 pounds, cut into 1-inch cubes)
  • 3 tablespoons olive oil
  • salt (to taste)
  • pepper (to taste)
  • 1 32-ounce jar marinara sauce
  • 6 ounces mozzarella cheese (shredded)
  • ¼ cup Parmesan cheese (freshly grated)
  • whole-wheat pasta (cooked, for serving)
  • basil (fresh, for serving)

Instructions
 

  • Preheat oven to 375° F.
  • Heat the olive oil in your largest skillet over medium heat. Add the cubed eggplant and cook while stirring until it darkens in color, about 5 minutes. Season with salt and pepper.
  • Pour half the marinara sauce in the bottom of a 13 x 9 inch baking dish. Shake it around to ensure it's evenly spread. Add the eggplant on top.
  • Sprinkle all but ½ cup of the shredded mozzarella on top of the eggplant, pour in the rest of the sauce, and top it with the remaining mozzarella and grated parmesan.
  • Bake until bubbly and golden brown, about 25 - 30 minutes. Serve warm over whole-wheat noodles and topped with fresh basil.

    I have an AIP Paleo diet that requires prepping and cooking from scratch. I would be using them for all the cutting of fruits and veggies. I would replace my 22 year old (wedding present) knives with these. My favorite knife we own was a knife we bought in Japan!

    I would use them for all the healthy eating we are now consuming due to 100 days of real food. Chopping veggies and fruits and meats and less processed food means a good set of knives are also in order!

    This is a beautiful set of knives. Slicing through a big ol watermelon, or a pineapple comes to mind first. With these three knives, I could probably make short order of all the prep needs in my kitchen

    I have never owned a set of good knives. This set would be amazing to have for all my prep work in the kitchen. I am finding cheap knives are well cheap and don't do the work or I am replacing them too often..
