Cheesy Eggplant Bake

Ingredients
  

  • 1 large eggplant (about 2 pounds, cut into 1-inch cubes)
  • 3 tablespoons olive oil
  • salt (to taste)
  • pepper (to taste)
  • 1 32-ounce jar marinara sauce
  • 6 ounces mozzarella cheese (shredded)
  • ¼ cup Parmesan cheese (freshly grated)
  • whole-wheat pasta (cooked, for serving)
  • basil (fresh, for serving)

Instructions
 

  • Preheat oven to 375° F.
  • Heat the olive oil in your largest skillet over medium heat. Add the cubed eggplant and cook while stirring until it darkens in color, about 5 minutes. Season with salt and pepper.
  • Pour half the marinara sauce in the bottom of a 13 x 9 inch baking dish. Shake it around to ensure it's evenly spread. Add the eggplant on top.
  • Sprinkle all but ½ cup of the shredded mozzarella on top of the eggplant, pour in the rest of the sauce, and top it with the remaining mozzarella and grated parmesan.
  • Bake until bubbly and golden brown, about 25 - 30 minutes. Serve warm over whole-wheat noodles and topped with fresh basil.

    I sometimes get more excited about using a new cooking utensil or gadget than I do new recipes! Chicken, sweet potatoes, fruit, nuts...what to the knives on are endless and would especially be handy when cutting that dreaded Spaghetti squash...so yummy but not always fun to cut!

    I have been making dramatic changes in my families meals and snacks over the past six months and began when seeing 100 Days of Real Food and subscribing to your newsletter. I have appreciated the education that you provide as well as the easy recipes. We are all cooking meals together (myself, my husband and my two teenagers), eating real foods which taste fantastic and we are having fun doing it as a family! You do need some essential kitchen tools and my husband and I have been looking for a good set of knives to use and have been doing quite a bit of research.     I would gift them to my husband. I love cooking for the family, but he is the one that does 75% of the cooking most of the year. I'd certainly "borrow" them when school is out and I get to dabble in the kitchen (a.k.a. make EVERYTHING from scratch that I can).

    I love to food prep! It's fun to see your knife skills get better. I always buy produce in whole form, very rarely from a bag. And I'm not a gadget person (I don't like to wash extra dishes) A good knife is all you need (or 3 beautiful ones!) I'm crossing my fingers I win!

    OMG I would finally be able to replace my old terrible knives that I am always cutting myself with. I am the ONLY cook in my family so the chore of cutting the MANY veggies that I cook with would become a pleasure! goo to their FACEBOOK page its great, I'd LOVE to try making nigiri and sashimi!

    I will use the knives to cut fish and meats and veggies and fruits and nuts and anything else that comes to mind! I will use them to prepare this amazing eggplant recipe, as well. Nothing beats a great set of knives in the kitchen!

    Wow! To have a great, durable, quality set of knives would be wonderful!! Me being a vegetarian, I would use them daily for veggies and/or bread. However, I also like to have family over, so they would also be used to prepare steaks, chicken, etc.

    My husband and I are using the same set of knives we got when we got married-32 years ago! They are a good set, but we are really trying to eat FRESH, healthy food as we get older, and that means alot of chopping! These knives would be awesome! Thanks!
