Cheesy Eggplant Bake

Ingredients
  

  • 1 large eggplant (about 2 pounds, cut into 1-inch cubes)
  • 3 tablespoons olive oil
  • salt (to taste)
  • pepper (to taste)
  • 1 32-ounce jar marinara sauce
  • 6 ounces mozzarella cheese (shredded)
  • ¼ cup Parmesan cheese (freshly grated)
  • whole-wheat pasta (cooked, for serving)
  • basil (fresh, for serving)

Instructions
 

  • Preheat oven to 375° F.
  • Heat the olive oil in your largest skillet over medium heat. Add the cubed eggplant and cook while stirring until it darkens in color, about 5 minutes. Season with salt and pepper.
  • Pour half the marinara sauce in the bottom of a 13 x 9 inch baking dish. Shake it around to ensure it's evenly spread. Add the eggplant on top.
  • Sprinkle all but ½ cup of the shredded mozzarella on top of the eggplant, pour in the rest of the sauce, and top it with the remaining mozzarella and grated parmesan.
  • Bake until bubbly and golden brown, about 25 - 30 minutes. Serve warm over whole-wheat noodles and topped with fresh basil.

    Oh, I'd so love to get rid of the big knife-holding block o' wood on my counter, and so many unnecessary knives! This flat box and only three all-in-one knives would be perfect for both my small kitchen and all the slicing/dicing I'm doing with all the fresh vegetables & fruits!

    I do meal prep at least once a week, sometimes an additional smaller prep on another day of the week. These knives would be so awesome to have for prepping and cooking! The recipe looks delicious, I'm excited to try it.

    I'd love to try the knives on tomatoes and bread... we have decent knives for everything else but I'm a lefty and our single-side serrated knives are horrible for me for tomatoes and bread.

    I love to cook but have never really gotten any nice cooking knives, mostly because of cost and because I think I just didn't realize the difference it would make until now. My 9 year old daughter is having open heart surgery in July and I would love to be able to use these when I am cooking nice healthy "real food" for her recovery.

    I love to cook and try new healthy recipes. I get so frustrated because my knives are not the best and it makes the work so much harder! I would love to be able to slice and dice vegetables for a great stirfry!

    I would love to use the slicing knif for fruit...thinner slices infuse better in my opinion.
    The vegitable knife would mostly be used for onion... what dinner is not made better with onion? Although I'm sure it would be great for pineapple too.
    And last but not least the utility knif I'd probably use to tighten the screw that is loose on the cabinet door....oh I mean I would use it to chop smaller stuff. These knives are absolutly beautiful!!!

    Wow these knives look amazing! I think I'd use them for EVERYTHING! Okay first I would start with a fresh Sockeye Salmon filet. I would cut it up into tiny little pieces. I really want to try this recipe I found for salmon burgers and these knives look like they would do an absolutely amazing job. I also can't wait for my summer garden to produce eggplant so I can also make the recipe above because it looks delicious!

    I desperately need to replace my older kitchen knives. I love to cook and do almost every day of the week but sometimes it gets frustrating when your knives just don't cut well! These would be awesome!!

    They would replace my current knives i use so much they become dull. When eating fresh non processed food i find myself chopping, dicing, cutting quite a bit. These knives would be such a great asstt.

    They'd probably replace my current knives. I chop veggies all too often, and a great set would makes things a lot easier! Also, fruits- with summer here, these would be awesome for watermelon!

    I like keeping my knife options simple. This is the perfect combination- a slicing, a vegetable, and a utility. Along with a bread knife, this is perfect for our vegetarian family of four. We all like to cook- and I'm getting my 5 year old interested in making meals on his own. You need good tools to do this well. Facebook!
