Cheesy Eggplant Bake

Ingredients
  

  • 1 large eggplant (about 2 pounds, cut into 1-inch cubes)
  • 3 tablespoons olive oil
  • salt (to taste)
  • pepper (to taste)
  • 1 32-ounce jar marinara sauce
  • 6 ounces mozzarella cheese (shredded)
  • ¼ cup Parmesan cheese (freshly grated)
  • whole-wheat pasta (cooked, for serving)
  • basil (fresh, for serving)

Instructions
 

  • Preheat oven to 375° F.
  • Heat the olive oil in your largest skillet over medium heat. Add the cubed eggplant and cook while stirring until it darkens in color, about 5 minutes. Season with salt and pepper.
  • Pour half the marinara sauce in the bottom of a 13 x 9 inch baking dish. Shake it around to ensure it's evenly spread. Add the eggplant on top.
  • Sprinkle all but ½ cup of the shredded mozzarella on top of the eggplant, pour in the rest of the sauce, and top it with the remaining mozzarella and grated parmesan.
  • Bake until bubbly and golden brown, about 25 - 30 minutes. Serve warm over whole-wheat noodles and topped with fresh basil.

    You know when you go to cut a tomato and instead of the knife sliding cleanly through it it just mashes the tomatoes until some falls off? That's my current (very sad) knife situation, and to be able to chop my veggies (including the difficult and large spaghetti squash) more easily would be a dream.

    The first thing I would love to use the Kamikoto knives for is my spaghetti squash primavera. Yummy but knife heavy dish and my old knives make it a bit of a chore

    I would use the knives to chop up all of my homegrown organic foods, so that I can preserve and freeze them to use during the winter months! We need a new knife set, so this would be the PERFECT replacement!

    I'd use them for what my husband and I call Fancy Food Fridays. Instead of eating out, we eat in and make something that takes more time than we normally have during the week. These knives look fantastic, my husband would love them!!!

    My knives are so terrible that they seem to generally be used to cut my fingers. I would love for them to actually cut vegetables instead... especially butternut squash and potatoes!

    My wife and I have been using random knives we've acquired over the past 15 years of marriage. We don't have a complete set, let along a knife that will cut anything!!! My wife is a homemaker and teacher to our 3 homeschooled children and she cooks everything from scratch, so lots of chopping of fruits, veggies, nuts, breads and every once in a while she dices up steak for steak tacos!!! I hope we win!!!

    I have never had a good knife set, but it didn't matter too much because I didn't cook that much. In he past few months I have set on a new eating habit thanks to reading your book and now cook almost everything from scratch. I have never used my crummy knives as much as I do now. I've heard you can cut down prep time by having good knives but how do I know what makes a good set of knives. There are so many to choose from and the prices are so high. I would LOVE to win this set to have my first really good set of knives in my entire married life (18 years). With 5 in my family, any time savings and money would be welcome!

    My current knives are 20 years old! I am looking to replace them. I use my knives every day. Having a good set of knives makes preparing meals easier. I love making meals for my family. These Kamikoto knives would be a wonderful replacement for my current ones.

    I want to make whole food recipes for my family. My 16 year son was diagnosed with MS last fall and we are trying to manage his disease with nutrition as his medication has not been successful at eliminsting flare ups. I am not a great cook but am learning quickly... and vegetables can be very stubborn to cut.

    I'd use them for all of our food prep! We currently have one cheap knife we bought on clearance from walmart ($1) and it's horrible. Makes food prep so hard.
