Cheesy Eggplant Bake

Ingredients
  

  • 1 large eggplant (about 2 pounds, cut into 1-inch cubes)
  • 3 tablespoons olive oil
  • salt (to taste)
  • pepper (to taste)
  • 1 32-ounce jar marinara sauce
  • 6 ounces mozzarella cheese (shredded)
  • ¼ cup Parmesan cheese (freshly grated)
  • whole-wheat pasta (cooked, for serving)
  • basil (fresh, for serving)

Instructions
 

  • Preheat oven to 375° F.
  • Heat the olive oil in your largest skillet over medium heat. Add the cubed eggplant and cook while stirring until it darkens in color, about 5 minutes. Season with salt and pepper.
  • Pour half the marinara sauce in the bottom of a 13 x 9 inch baking dish. Shake it around to ensure it's evenly spread. Add the eggplant on top.
  • Sprinkle all but ½ cup of the shredded mozzarella on top of the eggplant, pour in the rest of the sauce, and top it with the remaining mozzarella and grated parmesan.
  • Bake until bubbly and golden brown, about 25 - 30 minutes. Serve warm over whole-wheat noodles and topped with fresh basil.

    I cook daily for my family, and I have been dreaming of having a nice, quality set of knives. I avoid processed foods, which sometimes means extra prep work. I enjoy cooking, but knives like this would really make it a joy to be in the kitchen.

    We received a nice knife set for our wedding almost 16 years ago and could really use an upgrade. We have 4 kids and I am constantly chopping and dicing and peeling and cutting up fresh veggies and fruits for snacks and dishes. I would use these to help keep my kids full of great nutrients.

    Wow! I never knew there were knives that were that expensive. I'm sure they are FANTASTIC! We live in Alaska and besides cooking everything from scratch, we also process our own (organic ) moose every year. As you can imagine, find an entire MOOSE is quite the job and good knives would be AMAZING to have!
    I also liked on Facebook, interested to learn more about them.
    The Eggplant recipe looks really yum! But our quality of produce here isn't that great usually, never very fresh (and SO pricey!). But they are $1.49 now so hopefully I'll get to try it!

    Wow, what WOULDN"T I use these knives for??? They're amazing. A good knife makes a huge difference. Mostly they'd be used for veggies from the garden- can't wait for my eggplants to ripen so I can use this recipe. Thanks!
