The Kamikoto 神箏 Kanpeki Knife Set is handcrafted from high-quality steel from Honshu 本州, Japan and rigorously quality tested to ensure that it meets the distinction and caliber of Kamikoto 神箏.

The Kamikoto 神箏 Kanpeki Knife Set that we gave away includes one slicing knife (8.5 inches long), one vegetable knife (7 inches long), and one utility knife (5 inches long) to tackle the smaller, more intricate chores in the kitchen. Each knife is precision balanced and weighted for optimal form and long-lasting performance, and each blade is carefully tapered on one side and hollow ground on the other. Both handle and blade are satin finished, and the entire set is presented in a natural-colored ash wood box for safe storage and keeping.

Ingredients

  • 1 large eggplant (about 2 pounds, cut into 1-inch cubes)
  • 3 tablespoons olive oil
  • salt (to taste)
  • pepper (to taste)
  • 1 32-ounce jar marinara sauce
  • 6 ounces mozzarella cheese (shredded)
  • ¼ cup Parmesan cheese (freshly grated)
  • whole-wheat pasta (cooked, for serving)
  • basil (fresh, for serving)

Instructions

  • Preheat oven to 375° F.
  • Heat the olive oil in your largest skillet over medium heat. Add the cubed eggplant and cook while stirring until it darkens in color, about 5 minutes. Season with salt and pepper.
  • Pour half the marinara sauce in the bottom of a 13 x 9 inch baking dish. Shake it around to ensure it's evenly spread. Add the eggplant on top.
  • Sprinkle all but ½ cup of the shredded mozzarella on top of the eggplant, pour in the rest of the sauce, and top it with the remaining mozzarella and grated parmesan.
  • Bake until bubbly and golden brown, about 25 - 30 minutes. Serve warm over whole-wheat noodles and topped with fresh basil.

Notes

  1. Gluten free when using gluten-free pasta for serving.
  2. We recommend organic ingredients when feasible.

I would use these gorgeous knives to cut all of the beautiful local produce that I buy at the Union Square farmers market. This is my favorite time of year - tomatoes, eggplant, zucchini, soon corn. blueberries, strawberries, cherries!! Also the more unusual things, sunflower sprouts, fava beans, garlic scapes, avocado squash, etc.

I would use the knife daily as I am constantly cutting vegetables, fruit, cheese, and meat. I would specifically use it to slice chicken breast in half as that seems to be my most dangerous activity in the kitchen.

I grow Eggplants on my deck garden and am always looking for ways to prepare them and the other herbs I grow in my 3X3 ft garden. We eat a lot of vegetables and my husband is retired (I still run my own business) and he loves to eat at home, so I try to prepare him lots of fruits and vegetables. These knives are an amazing way to expertly prepare the foods, quickly and safely. love your website. Thank you

I need a good knife to help cut my home grown tomatoes! Every time I cut them with my Calphalon knife (regardless the type), they smush not slice. Plus my 8-yr old, expensive Calphalons already begin to show spots of rust on the blade. Help me enjoy prepping my food for good eats. :-)
