Each knife is precision balanced and weighted for optimal form and long-lasting performance, and each blade is carefully tapered on one side and hollow ground on the other. Cheesy Eggplant Bake

Ingredients
  

  • 1 large eggplant (about 2 pounds, cut into 1-inch cubes)
  • 3 tablespoons olive oil
  • salt (to taste)
  • pepper (to taste)
  • 1 32-ounce jar marinara sauce
  • 6 ounces mozzarella cheese (shredded)
  • ¼ cup Parmesan cheese (freshly grated)
  • whole-wheat pasta (cooked, for serving)
  • basil (fresh, for serving)

Instructions
 

  • Preheat oven to 375° F.
  • Heat the olive oil in your largest skillet over medium heat. Add the cubed eggplant and cook while stirring until it darkens in color, about 5 minutes. Season with salt and pepper.
  • Pour half the marinara sauce in the bottom of a 13 x 9 inch baking dish. Shake it around to ensure it's evenly spread. Add the eggplant on top.
  • Sprinkle all but ½ cup of the shredded mozzarella on top of the eggplant, pour in the rest of the sauce, and top it with the remaining mozzarella and grated parmesan.
  • Bake until bubbly and golden brown, about 25 - 30 minutes. Serve warm over whole-wheat noodles and topped with fresh basil.

    I joined a diet program called Real Appeal and have lost 14 pounds so far :) I'm still in the process of replacing things in my families diet with healthier options; more fruits and veggies, baked chicken breast. I'm still using knives from when I got married 23 years ago and cutting meat is difficult. Would love to attend cooking classes and learn more and more!

    These knives would be awesome for chopping up healthy food to cook for my extended family. Veggies on the grill, chopped tomato for inclusion into a hearty egg breakfast and the ultimate chopping knives for food for my dad who is on a finely chopped food diet regime.     I am obsessed with all knives and love getting new ones to play with.

    The slicing knife would be great for all the meat that is prepared and presented in my kitchen. One that can hold up and not get dull.

    The vegetable knife would be used for getting fruits/veggies paper thin for presentation - like radishes or stone fruit on salads.

    Having a sharp paring knife for things like peeling apples and getting the white parts out of bell peppers is key.

    So looking forward to a new set of knives :)

    I'm obsessed with knives for different purposes. I'm constantly cutting meat (which dulls some of my knives quickly) so having a one that can hold up is key - slicing knife. The vegetable knife would be used for my hearty root vegetables, as well as getting other fruits/veggies (radishes, carrots, cucumbers, stone fruit) paper thin for presentation. Lastly, I'd love a new pairing knife for getting the white parts out of bell peppers and similar uses. So excited to get a new set :)
