The Kamikoto 神箏 Kanpeki Knife Set that we gave away includes one slicing knife (8.5 inches long), one vegetable knife (7 inches long), and one utility knife (5 inches long) to tackle the smaller, more intricate chores in the kitchen. Each knife is precision balanced and weighted for optimal form and long-lasting performance, and each blade is carefully tapered on one side and hollow ground on the other. Cheesy Eggplant Bake

Ingredients
  

  • 1 large eggplant (about 2 pounds, cut into 1-inch cubes)
  • 3 tablespoons olive oil
  • salt (to taste)
  • pepper (to taste)
  • 1 32-ounce jar marinara sauce
  • 6 ounces mozzarella cheese (shredded)
  • ¼ cup Parmesan cheese (freshly grated)
  • whole-wheat pasta (cooked, for serving)
  • basil (fresh, for serving)

Instructions
 

  • Preheat oven to 375° F.
  • Heat the olive oil in your largest skillet over medium heat. Add the cubed eggplant and cook while stirring until it darkens in color, about 5 minutes. Season with salt and pepper.
  • Pour half the marinara sauce in the bottom of a 13 x 9 inch baking dish. Shake it around to ensure it's evenly spread. Add the eggplant on top.
  • Sprinkle all but ½ cup of the shredded mozzarella on top of the eggplant, pour in the rest of the sauce, and top it with the remaining mozzarella and grated parmesan.
  • Bake until bubbly and golden brown, about 25 - 30 minutes. Serve warm over whole-wheat noodles and topped with fresh basil.

    I would use these knives to cut fresh vegetables, meat, and, fruit to create healthy meals for my grandchildren. I would also use them to create fresh herb butter and herb oils using the smish/smash/smoosh method!

    I would love these knives for general meal prep at my house, but honestly I would give them to my son. He is in grad school at Idaho State University, engaged to be married, and loves to cook, fish, garden, and make wine. He is working for the US Forest Service this summer.     I'd love to use this knife set for all my meal prep. I've had trouble finding good knives in the past, especially a high quality chef's knife. We chop a lot of peppers, onions, potatoes, carrots--you name it! It would be so nice to have a good knife set that stays sharp.

    What a great giveaway! We grow fresh herbs, veggies and fruit, and can a lot of salsa and other goodies in the fall...these knives would sure make prep work more fun!
