Ingredients & Substitutes

These are the ingredients for these flourless peanut butter cookies. Scroll down to the recipe card at the bottom for the entire recipe.

First, use all natural peanut butter made from only peanuts and salt. Do not use peanut butter with added oil or sugar.

We love using coconut sugar when baking. It is lower on the glycemic index than white sugar and doesn't cause your blood sugar to spike. If you only have brown sugar, that works too.

Only one egg is needed!

Lastly, dip the cookies in melted chocolate. We recommend looking for chocolate that contains only natural sweeteners.

They're soft and a little bit chewy. Every bite is full of that rich peanut butter taste, with just the right amount of sweetness.

How to Make

Step 1

First, preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.

Step 2

Mix the cookie dough: In a medium bowl, combine the peanut butter, coconut sugar, and egg. Stir until smooth and fully combined.

Step 3

Shape the cookies: Scoop out about 1 tablespoon of dough and roll it into a ball. Place the balls onto the prepared baking sheet, about 2 inches apart. Flatten each ball slightly with a fork, making a criss-cross pattern.

Step 4

Bake: Bake for 8-10 minutes, or until the edges are slightly golden. Be careful not to overbake—these cookies will continue to firm up as they cool.

Step 5

Cool: Let the cookies cool on the baking sheet for 5 minutes, then transfer them to a wire rack to cool completely.

Step 6

Melt the dark chocolate: In a small microwave-safe bowl, melt the dark chocolate chips in 20-30 second intervals, stirring in between, until smooth.

Step 7

Dip the cookies: Once the cookies are cool, dip half of each cookie into the melted dark chocolate. Place the dipped cookies on a parchment-lined tray and allow the chocolate to set. If desired, sprinkle with flaky sea salt.

Step 8
