Use your favorite type of chips – semi-sweet, dark (my personal favorite for a beautiful contrast!), or even milk chocolate.

Coconut oil helps the chocolate melt smoothly and harden quickly when chilled, thanks to its unique properties.

Opt for all-natural, creamy peanut butter with just peanuts and salt for the purest flavor. Swap it for cashew butter, almond butter, or even sunflower seed butter for a nut-free option.

Coconut flour acts as a thickening agent for the peanut butter filling. While substitutions haven't been tested, almond flour or oat flour might work in a pinch.

Pure maple syrup adds a touch of sweetness without refined sugar. Honey can be used as a substitute if needed.

How to Make

Step 1

First, line a pan with parchment paper.

Step 2

In a bowl, add the dark chocolate chips and coconut oil. Microwave for 30 seconds, or until melted. Stir until creamy.

In another bowl, combine the creamy peanut butter, coconut flour, and pure maple syrup. Stir until a thick mixture is formed.

Use your hands to form the mixture into egg shapes. They should be approximately 2 inches long, 1 inch wide, and ½ inch thick.

Use a fork to lower each peanut butter egg into the melted chocolate. Coat on all sides. Carefully place back on the prepared pan.

Once all of the eggs have been coated with chocolate, place the pan in the freezer for 10 minutes, or until the coating has hardened.

Step 7

Lastly, remove the peanut butter eggs from the freezer. If wanted, drizzle more melted chocolate on top!

Notes

  • Be careful melting the chocolate chips and coconut oil.  Microwave only in 30 second increments, not longer. Stir to avoid burning.
  • The peanut butter eggs do not have to be perfect looking.
  • Use parchment paper to prevent sticking and for easy clean up.
  • I have not tried this recipe using almond flour, but at least 4 tablespoons would be needed to replace the coconut flour.
  • Allow the chocolate coating to fully harden before removing from the freezer.
  • Store leftovers in the fridge or freezer.

    Can you use whole wheat flour? If so, how much would you suggest?

      Sure, that should work. I would start with 2 tablespoons, but you will probably need about 3 tablespoons. Refer to the pictures throughout the post to see what the thick peanut butter filling should look like! Enjoy!
